Today I was craving something to satisfy my sweet tooth, and I knew exactly what would do the trick.
I love, love, love these Banana Balls. They are sweet and refreshing (and sort of taste like a banana split!). They are one of my favorite recipes, and so quick and easy to whip up!
Banana Balls
- 1/3 c maple syrup
- 1/3 c almond milk
- 1/3 c raw cacao powder
- 2 tsp vanilla extract
- 2 very ripe bananas
- 2 c oats
- shredded coconut
Blend maple syrup, almond milk, cacao powder, vanilla, and bananas in blender or food processor. Transfer mixture to a bowl. Add oats and mix well. Set in fridge for 30 minutes to firm. Line dish with parchment paper. Place coconut in small bowl. Using a small spoon, scoop up a little chocolate ball and drop into a bowl of coconut. Turn ball over in mixture of coconut until coated, and then gently place on lined dish. Freeze to set, then store in freezer in airtight container.
